Cranberry Vinaigrette Salad

Units Scale
  • 6 cups chopped romaine lettuce
  • 1 cucumber, washed and shredded
  • 1 carrot, washed and shredded
  • 1/2 cup sweet onion, cut thinly

For the Vinaigrette

  • 1/4 cup Cape Cod Select frozen cranberries, thawed
  • 1/4 cup mirin vinegar
  • 1/4 cup seasoned rice vinegar
  • 1/4 teaspoon sesame oil
  • 1/2 cup olive oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper


  • Place chopped romaine, shredded carrots, cucumber, and onion in a large salad bowl
  • In a food processor or blender, combine the remaining ingredients and blend for 30 -60 seconds.
  • Right before serving, pour vinaigrette over salad and toss to combine
