Ingredients

  • 6 cups chopped romaine lettuce
  • 1 cucumber washed and shredded
  • 1 carrot washed and shredded
  • ½ cup sweet onion cut thinly
  • For the Vinaigrette
  • ¼ cup Cape Cod Select frozen cranberries thawed
  • ¼ cup mirin vinegar
  • ¼ cup seasoned rice vinegar
  • ¼ teaspoon sesame oil
  • ½ cup olive oil
  • ½ teaspoon sugar
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Place chopped romaine, shredded carrots, cucumber, and onion in a large salad bowl
  • In a food processor or blender, combine the remaining ingredients and blend for 30 -60 seconds.
  • Right before serving, pour vinaigrette over salad and toss to combine
