Jicama Carrot and Mango Slaw

Ingredients

  • 2 cups shredded jicama
  • 1 mango
  • 2 cups shredded carrot
  • 2 teaspoon fresh mint
  • ¼ cup mayonnaise
  • 2 tablespoons rice vinegar
  • ¼ cup sugar
  • 2 tablespoons lemon juice
  • salt and pepper to taste

Instructions

  • Shred carrot and jicama
  • Chop mint fine
  • Peel and cut mango into small cubes
  • In a mixing bowl combine remaining ingredients, toss to coat
  • Serve immediately

Notes

Transform this side dish into an entree by adding grilled shrimp, fish or chicken
