Jicama Carrot and Mango Slaw

Ingredients
2
cups
shredded jicama
1
mango
2
cups
shredded carrot
2
teaspoon
fresh mint
¼
cup
mayonnaise
2
tablespoons
rice vinegar
¼
cup
sugar
2
tablespoons
lemon juice
salt and pepper to taste
Instructions
Shred carrot and jicama
Chop mint fine
Peel and cut mango into small cubes
In a mixing bowl combine remaining ingredients, toss to coat
Serve immediately
Notes
Transform this side dish into an entree by adding grilled shrimp, fish or chicken
