Ingredients
1wholerotisserie chicken, skinned, boned and chopped into bite size pieces
1cupmayonnaise
1 ½Tablespoonsdried tarragon
1Tablespoonchopped celery
1Tablespoonchopped green onion, white and green parts
1Tablespoonflat-leaf parsley, fine chopped
¼teaspoonsalt and pepper
4croissant rolls, sliced
Instructions
Remove skin from chicken. Pull all white and dark meat from bones and chop. Discard skin and bones or reserve them to make chicken stock.
In a large mixing bowl, combine all the ingredients. Stir until they are well combined.

Notes
When using dried tarragon it's best to refrigerate the chicken salad for 3 hours before serving or overnight in an airtight container. This allows the tarragon flavor to "bloom" and become more fragrant. ENJOY!
