Ingredients

For the Fried Pickles

  • 1 jar 16 oz thick-cut dill pickle slices (save the juice!)
  • 1 large egg
  • ½ cup milk
  • ¾ cup all-purpose flour
  • 1 teaspoon seasoned salt
  • Vegetable oil for frying

For the Burgers & Assembly

  • 4 ground Wagyu beef patties
  • 4 brioche buns buttered
  • 1 large white onion thinly sliced
  • Heinz Yellow Mustard to taste
  • Toothpicks for assembly

Instructions

  • Step 1: Prep the Onions & Pickles
  • Thinly slice the white onion and submerge the slices in a bowl of cold water (this keeps them extra crisp and mellows the raw onion bite).
  • Drain the pickle slices thoroughly. (Pro-Tip: Keep the pickle juice in the fridge to use for brining chicken or pork chops!)
  • Step 2: Bread & Fry the Pickles
  • In a small mixing bowl, whisk together the egg and milk.
  • In a shallow baking dish, combine the flour and seasoned salt.
  • Dip each pickle slice into the egg wash, then coat directly in the flour mixture. Set flour-coated pickles on a paper-towel-lined baking sheet until all are prepped.
  • Heat vegetable oil in a skillet over medium-high heat. Fry the pickles in batches until golden brown and crispy. Transfer to paper towels to drain.
  • Step 3: Grill the Burgers & Buns
  • Cook the Wagyu beef patties on a hot grill until they reach your desired level of doneness.
  • Butter the brioche buns and toast them on the grill until lightly browned.
  • Step 4: Assemble & Serve
  • Spread a generous layer of yellow mustard on both the top and bottom toasted buns.
  • Drain the onions on paper towels and divide them evenly on the bottom buns.
  • Add the cooked Wagyu patties, a generous stack of hot fried pickles, and another drizzle of yellow mustard.
  • Top with the bun, secure with a toothpick (spear a fried pickle on top for garnish!), and enjoy immediately!
