Heat the grill on high. Cut the peaches in half and remove the pits. Drizzle with 1 tablespoon of fruity olive oil, a pinch of salt, and 1 tablespoon of honey. Toss to coat evenly.
For the Ice Cream
In a large bowl, combine ice cream, goat cheese, lemon zest, and juice and 2 tablespoons of honey. Add more honey for sweeter flavor. Place the mixture in an airtight container and refreeze until ready to use. 1-4 hours
Grill peaches on high until they have good grill marks. I like to add a tablespoon of cottage chees to the serving plate to keep the peaches from sliding around the plate; optional. Serve with a scoop of ice cream and more honey, and enjoy
