Ingredients

Oat Crumble Topping

  • 3 cups rolled oats
  • 2 cups flour
  • 1-½ cups brown sugar
  • 1 teaspoon salt
  • 1-½ teaspoon vanilla
  • 1-½ cups butter melted
  • 1 teaspoon baking powder

Date Flling

  • 2 pounds dates
  • ½ cup water
  • ½ cup sugar

Instructions

Oat Crumble Topping

  • In a large mixing bowl, crumble all ingredients together. Add melted butter and mix thoroughly; then, set aside.
  • Remove date pits by mashing them with a large knife, and soak them in ½ cup hot water for 5 minutes. Using a food processor, pulse the sugar and date water mixture until it becomes a paste, leaving large chunks of dates for texture.
  • Spread half of the crumb mixture into a 16x22-inch deep-sided baking pan, layer with the date filling, then cover the dates with the remaining crumb mixture and bake for 30 minutes.
  • Makes 32-36, 2 inch square bars.
