My Momma's Date Bars

Ingredients
Oat Crumble Topping
- 3 cups rolled oats
- 2 cups flour
- 1-½ cups brown sugar
- 1 teaspoon salt
- 1-½ teaspoon vanilla
- 1-½ cups butter melted
- 1 teaspoon baking powder
Date Flling
- 2 pounds dates
- ½ cup water
- ½ cup sugar
Instructions
Oat Crumble Topping
- In a large mixing bowl, crumble all ingredients together. Add melted butter and mix thoroughly; then, set aside.
- Remove date pits by mashing them with a large knife, and soak them in ½ cup hot water for 5 minutes. Using a food processor, pulse the sugar and date water mixture until it becomes a paste, leaving large chunks of dates for texture.
- Spread half of the crumb mixture into a 16x22-inch deep-sided baking pan, layer with the date filling, then cover the dates with the remaining crumb mixture and bake for 30 minutes.
- Makes 32-36, 2 inch square bars.
