Jicama carrot and mango slaw is full of bright flavor and color! This delicious slaw recipe makes the perfect side dish, or add protein to make a complete meal.

After visiting my friend Ann, at anncoojournal.com this week, I was inspired to make this fresh and delicate jicama carrot and mango slaw recipe. Transform the dish into an entree by adding grilled shrimp, fish or chicken.

Jicama Carrot and Mango Slaw

Servings 6

Ingredients
  

  • 2 cups shredded jicama
  • 1 mango
  • 2 cups shredded carrot
  • 2 teaspoon fresh mint
  • ¼ cup mayonnaise
  • 2 tablespoons rice vinegar
  • ¼ cup sugar
  • 2 tablespoons lemon juice
  • salt and pepper to taste

Instructions
 

  • Shred carrot and jicama
  • Chop mint fine
  • Peel and cut mango into small cubes
  • In a mixing bowl combine remaining ingredients, toss to coat
  • Serve immediately

Notes

Transform this side dish into an entree by adding grilled shrimp, fish or chicken

    Mmmm looks wonderful! Perfect summer salad, and definitely makes us appreciate that winter is finally losing its grip. Sometimes all we want is a salad, and this would be perfect!

      Thank you Tina. I've been lucky this spring to be living in California instead of my hometown of Denver. It's been bitter cold in CO with snow and a lot of wind. Thankfully, my new hometown near San Francisco California has been beautiful with low to mid 60's most days with intermittent rain. Grocery produce, spring fruits and veggies are cropping up all over the state. I feel blessed to enjoy them much earlier than the rest of the country.
