These little gems are more than just baked goods; they are a warm hug from the oven on a lazy Sunday morning.

    The Perfect Blend Of Flavors

    Ripe Bananas: Toss them in the trash or make them the star of the show?

    This 30-minute recipe makes the choice easy. Our hero ingredient, ripe bananas, seems always to be hanging out around our kitchens, getting more ripe by the hour. The question of tossing them out or making banana bread always has me in a quandary: toss them in the trash or make them the star of the show? I feel so guilty when I throw overripe bananas away! Don't you?

    Thankfully, my recipe, which includes oats, is good for you and can be on your breakfast plate in 30 minutes. Those speckled-skinned, dark brown ugly fruits add their natural sweetness, moisture, and unmistakable banana flavor. Don't be tempted to use underripe bananas: we want them too ugly to enjoy freshly peeled.

    Purest Of Flavor

    I'm a purist when it comes to banana oat muffins. I don't like to mess with the flavor, so I opt for the simple pleasure of the best vanilla extract and bananas. When my grandkids visit, I make them with chocolate chips; for special occasions, I have been known to add chopped walnuts.

    Equipment

    • 1 muffin tin

    Ingredients
      

    • 1 ½ cups unbleached all-purpose flour
    • 1 cup rolled oats
    • ¾ cup white sugar
    • 2 teaspoons baking powder
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 1 egg
    • ¾ cup milk
    • ⅓ cup vegetable oil
    • ½ teaspoon vanilla extract
    • 1 ½ cups mashed bananas

    Instructions
     

    • Preheat the oven to 400 degrees F (205 degrees C). Line a 12-cup muffin tin with paper liners.
    • Combine the flour, oats, sugar, baking powder, soda, and salt in a medium bowl and set aside.
    • Beat the egg lightly in a large bowl. Whisk in the milk, oil, and vanilla. Stir in the mashed bananas. Add the flour mixture and stir until just combined.
    • Spoon the batter into the prepared muffin cups using an ice cream scoop, filling each ¾ full.
    • Now, it's time to let the magic happen in the oven. Bake these muffins in the preheated oven until the tops spring back when lightly pressed, which should take around 18 to 20 minutes.
    • Feel free to add your own twist to the recipe. If you’re in the mood, you can sprinkle in some chocolate chips for an extra indulgence!

    Notes

    If you don't have cupcake holders, be sure to oil each muffin tin generously with vegetable oil or vegetable oil spray.
