    Fried Green Tomato and Egg Sandwich-my delicious breakfast

    One of my 'go to' comfort foods, Fried Green Tomatoes always satisfy.  Lightly floured with corn meal, the tart tomatoes bring the perfect balance to the creamy soft fried eggs.   This is my favorite version of fried green tomatoes. Fried Green Tomatoes 4-6 green tomatoes sliced thick 1 cup flour ½ cup corn meal 1 teaspoon salt 1 teaspoon pepper 1 cup butter or vegetable oil Method Slice tomatoes thickly, in a medium bowl mix dry ingredients, flour both sides of a tomato and place in a hot skillet, repeat until your skillet is full but the tomatoes aren't to crowded
    Fried Green Tomatoes
    4-6 green tomatoes sliced ¼ inch thick
    1 cup flour
    ½ cup corn meal
    1 teaspoon salt
    1 teaspoon pepper
    1 cup butter or vegetable oil

     

    Method
    Slice tomatoes thickly, in a medium bowl mix dry ingredients, flour both sides of a tomato and place in a hot skillet, repeat until your skillet is full but the tomatoes aren't to crowded.

      In a sandwich, I prefer my eggs over easy. Although poached are great - in fact I have some eggs that are 1 day old that I'm thinking of poaching for dinner tonight. Great sandwich - green tomatoes have such an interesting flavor.
